Introduction
Maitake Mushroom is the dried fruiting body of the fungus Grifola frondosa (family Meripilaceae). The fruiting body consists of a large, clustered, rosette-like structure formed by numerous overlapping, fan-shaped or spatulate caps. The entire structure can reach 20-60 cm in diameter. Individual caps are 2-10 cm wide and 0.2-0.7 cm thick. The upper surface is grayish-brown to brown with radial, fibrous streaks; the underside is white to pale yellow, densely covered with angular pores. It has a delicate, aromatic odor and a mild taste with a characteristic umami flavor of edible fungi.
