Introduction
Hericium Erinaceus is the dried fruiting body of the fungus Hericium erinaceus (family Hericiaceae). The fresh fruiting body is an irregular, globular mass, typically 5–20 cm in diameter, covered with dense, hanging, cylindrical spines resembling a monkey's head, hence its common name. When fresh, it is uniformly white or pale yellow, with soft spines measuring 1–3 cm in length. Upon drying, it turns light yellow to yellowish-brown, and the spines become brittle, often partially broken or detached. The texture is light and spongy, with a loose fracture. It has a faint, characteristic aroma and a slightly bitter taste, accompanied by a distinct umami flavor typical of edible fungi.
